Present Box Cake

Sorry l've been neglecting my poor little blog, but the Winter Flu or more likley Swine Flu has caught up with me and it has knocked me for six!. So alas l haven't done much baking, but l did manage to make this adorable 4" Present Box Cake for Coopers Teacher's Birthday.

I got the idea for this cake from the Planet Cake Book, it was really quite simple to even for a newbie like me.

I promise to post more once l have returned from my sick bed and actually have something entertaining to say!

Simple but Elegant















Well l am sad to announce that l had my last class tonight, I can't believe that it has finished!. There is sooo much more that l want to learn, I can't wait to start another one.

Tonight we learnt how to decorate a cake with rough icing using Royal Icing, I thought l would l really enjoy doing this but alas l was getting annoyed that my rough wasn't perfect! But l love the finished product.

I used Ivory and Black as my colour theme, I just love this combination. It's simple but elegant at the same time. If l could go back in time, I would have this for my Wedding Cake.

Up up and away.....

God help me! My husband has the dreaded man flue, he is in bed laughing his head of whilst watching the new episode of Top Gear! The poor thing, he must be feeling terrible ;-).....

Well l have had a busy couple of days, with taking care of the above very sick husband. I also had a order to make some cupcakes for a little boy who was having his birthday at the Plane museum. I decorated the cupcakes with pale blue Butter Icing (to represent the sky) and some really cute little planes which l made with fondant.

I used the Coconut Cake Recipe from the Planet Cake Cook Book

220g softened butter
325g lightly packed brown sugar
1 tsp coconut extract
3 eggs
130g desecated coconut
360g SR flour
360ml butter milk

Preheat oven to 180, Grease tin and line base and sides.

Beat butter, sugar and coconut extract until light and fluffy. Add eggs one at a time beat well after each. Fold in the comined coconut and sifted flour alternating with spoonfuls of buttermilk.

Spoon mixture into tin. For a cake you would bake it for 1hr 10 min until goldern & skewer comes out clean. For the cupcakes l baked them for 25 minutes

Leave in tin for at least 5 minutes then turn out onto wire rack to cool.
