Happy Anniversary...

This adorable 4 Inch Cake was made for my son's teacher. She wanted a cake for two for her anniversary, the only thing requested was that she wanted a grey teddy bear on top and that it should say l love you somewhere.

I'm pretty pleased with how it turned out.

Well some exciting news, yesterday l went for a job interview at LET THEM EAT CAKE for anyone that does not know, this is the leading cake shop in Melbourne. They have the most amazing cakes, cupcakes etc. their designs are so creative and their work flawless.

After showing him some of my work, he said to give him a call in December as there will be some work for me in January. What a way to start the new year,I can't tell you how excited l am let's hope l don't disappoint them!

Chocolate Chip Cookies

This recipe is very special to me, for my Hens / Kitchen Tea Day my beautiful friends organised everyone to bring their favorite baking recipe. They then made me my very own book filled with some beautiful recipes, come to think about it maybe they did this so l could make them their favorites whenever they visited!

I got this one from Jane, she was my matron of honor.

1/2 Cup Butter
1 tblsp Peanut Butter
1/2 Cup White Sugar
1/2 Cup Brown Sugar
1 Egg Beaten
1 tsp Vanilla Essence
1 3/4 Cup Plain Flour
1/2 tsp bi-carb soda
1 Pinch Salt
1 Cup of Chocolate Chunks / Chips

Preheat Oven to 180'C
Beat Butter and Peanut Butter
Add both sugars and mix together till lighter in colour and fluffy
Add beaten egg and vanilla, mix
Fold through sifted flour and soda and salt
Mix in Chocolate
Roll into balls
Place cookies on a lined baking tray with enough room in between for the cookies to spread.

Best eaten as soon as they have come out the oven!

Baby Jack


I was asked to make this cake from one of the Fathers from Cooper's Pre Prep Class, he organised this to celebrate the birth of their son Jack. His wife just love's cake, unfortunately she suffered quite badly from Diabetes and was unable to have anything sweet. To get her through labour he promised her a cake filled with lots and lots of Chocolate! Is there nothing chocolate can't fix?

I was given free range at designing the cake, l am really pleased with how it turned out.

I should also mention that baby Jack is just gorgeous!

Spring is in the air....

Well my poor little blog has been a bit neglected of late, but luckily that's only because l have been busily decorating. I'm really enjoying cake decorating, so much so that l am thinking of doing an apprenticeship. I think this will be the best form of training l could ever have, I have an interview at Let them eat Cake in South Melbourne on Tuesday. I'm so nervous l haven't worked for so long!

On another note I've had quite a few orders for cakes and cookies which has been amazing, I entered the above Cake into my first competition it placed Third which l was wrapped with and wasn't expecting.

I was lucky that is was my cousin's christening on the same weekend, so everyone got to enjoy the cake! The bottom cake was Chocolate Jaffa Mud, the Middle White Chocolate and the top was a Dummy Cake.

I had some Green Fondant left over, so l made some Cookies Lollypops to match the cake.

mmm l'm stumped for a title....



What a day l had making this cake, I got the order for this cake at 10.00am in the morning and they wanted to pick it up at 6.00 that same evening eek. Panic stations hit, l had to bake two cakes, make and ganache the cake and the cover the board and cake with fondant. Normally all of this would be done over a couple of days, but l only had a couple of hours. At least l know I'm getting quicker!

The cake turned out beautifully, the client was thrilled!

I'm in heaven, Banana Cake dream!

This banana cake is a dream! Normally my banana cakes are quite dense and heavy, but this is deliciously light. I have even converted my non banana cake loving husband into someone who ate half the cake in one sitting.

I got this recipe from a fellow blogger 4 Goodness Cake who's cakes and recipes are just amazing. I can't wait to try more of her recipes.

I decorated the cake with cream cheese icing,

125g Butter
250g Cream Cheese
2 Cups of Pure Icing Sugar

Beat Butter and Cream Cheese until light and fluffy.
Add sifted icing sugar, and beat until combined

Dinosaur Biscuits


Now I did warn you that l would be back with another Gingerbread Biscuit post, my sons just love these biscuits and this is basically the only baked thing that they really like besides a plain Vanilla Cupcake.

Cooper is learning all about Dinosaurs at School, everyone was asked to bring something Dinosaur related for show and tell this week. So Cooper excitedly asked if we make some Dinosaur cookies to bring in.

On another note, my new Website is nearly up and running. Hopefully it should be finished by the end of next week, finally Will's IT business has come in handy!

We are off to Tasmania this weekend with some good friends for a tantrum oops I mean child free weekend.

Lemon Cream Cheesecake


My husband Will has been feeling a little left out after l started my baking craze, he nags that l no longer make his favorite Lemon Cheesecake. So after he woke up one morning feeling a bit low, l decided the boys and l would cheer him up with no other then his favorite dessert.

This is not my usual Cheesecake recipe, but with time not on my side and the apprentices ready and rearing to go I just used the Philadelphia Cream Cheese Recipe. It was simple to follow and the Cake set relatively quickly.

As you can in my photos l decided to quickly write a little message, not my best writing but I wanted to finish it before Will came home.

Cake for one....

Be warned this recipe is highly addictive, and will make you consume way much more then you should!

I've had this recipe in my things to try folder for quite some time, so with friends coming over on a cold and wet night I thought it was the perfect time to try.

I decided to make cupcakes and served them with warm chocolate ganache drizzled over the top and or course a big dollop of cream. I unfortunately l forgot to take a picture of them (too many Champagnes!)

The next day with a clear head, l made this cake for one. I used two of the cupcakes layered them together with Chocolate Ganache and then covered it with Fondant.

This is going to be a big call, but l think this may be the best Chocolate Mud Cake l have ever made.
